Julio Guerra began his culinary career at a small restaurant in Margarita Island, Venezuela in 2012. Growing up, he often joined his mom in the kitchen making traditional Venezuelan cuisine. Yet, his first restaurant position was something he was less familiar with - as the menu was primarily Italian! This ignited a sense of passion and creativity, and Julio’s love for making flavoursome dishes would only increase as time went on.
Julio went on to complete his diploma in Culinary Arts at Colegio Nuestra Señora de La Asunciòn. Shortly after, he made his journey to Canada in 2018 where he completed additional culinary studies at Niagara College. He went on to work at various restaurants in the Niagara Region, including Pearl Morissette and Treadwell Cuisine where he enjoyed working alongside and learning from some of the top chefs of the region.
Julio began his current position as Executive Chef at Solange Bistro at the end of 2022. Alongside owner Dave Bergeron, Julio has developed an ever-changing menu of French Bistro fare. The two have aligned on the most essential part of any restaurant: creating fresh, high quality dishes for their guests to enjoy.
